Beef carpaccio is one of our favourite Italian dishes. Whether served as a starter or as a canapé, this dish will melt in your mouth, providing you use the best quality fillet steak that you can get your hands on. Simplicity and quality are key.

- Ardross fillet of beef
- Rapeseed oil
- Parmesan to garnish
- Season the fillet well with salt and pepper.
- Heat a frying pan until very hot. Rub fillet with rapeseed oil and then sear on all sides. Quickly roll the fillet in the honey, sea salt and cracked black pepper.
- Cover tightly in cling film (making into a sausage with the ends twisted to keep it firmly in shape) and transfer to a fridge until well chilled. Slice very thinly. Put between two layers of cling film or grease proof paper, flatten with a knife and then serve.
