It’s official. Byron Burger has landed. The restaurant renowned for incredible burgers, and a selection of sides that will make your buttons pop off your jeans, is now situated on the corner of North Bridge and the Royal Mile.
The chain is part of Byron’s larger foray into Scotland – following the launch of their first Scottish Byron in Aberdeen at the end of last year, and a third restaurant set to open on Glasgow’s West George Street in the coming months.
Founded by Tom Byng in 2007 with the mission of serving proper hamburgers like those he remembered fondly from his college days in the States, Byron’s hamburgers are made from four cuts of properly sourced British beef, ground fresh, cooked medium so they’re pink and juicy, served in a squishy bun. The drinks list gives pride of place to Byron’s carefully chosen selection of craft beers and bourbons, famously thick milkshakes and hard shakes, and craft sodas.

As with every Byron restaurant, Byron North Bridge has been individually designed: behind the eye-catching sign screening the site, Byron’s designers and craftspeople are putting the finishing touches to a restaurant that is both grand and cosy. Vintage furniture, shelves decorated with antiques, and plenty of Byron’s trademark leather banquettes are set against modern touches such as exposed workings and an open kitchen.
Byron’s Edinburgh opening follows the launch of its partnership with the charity One Feeds Two®, founded from an Edinburgh soup van by JP Campbell. Byron is the charity’s first nationwide restaurant partner, with 25p from every hamburger special sold going to One Feeds Two® to provide a school meal for a child in need.
