On a particularly rainy day in Edinburgh, writers, chefs, restaurateurs and other Scottish foodies gathered together in Mark Greenaway’s North Castle street restaurant to sample his new signature canapé selection.
As a highly sought after Scottish Chef, Mark is often asked to cater private events, however, given the popularity of his restaurant he often has to turn down these invitations. The solution? To pair up with one of the most innovative, award-winning event caterers in Scotland; Appetite Direct.
Collaborating with Nigel Kennedy, Director of Appetite Direct and Cat Johnson, Head Chef at Appetite Direct was, of course, the key to the success of this range.
“As an ambassador for Scottish food and drink and this being the year of food and drink in Scotland, I was looking for new ways to expand and offer my food at outside events across the country. My first port of call was to sit down with the team at Appetite Direct, as their reputation in the Edinburgh culinary scene is second to none. This partnership is wonderful as it allows me to reach beyond my restaurant kitchen. The canapés themselves stick to my style of using classic methods and local ingredients but updating them with modern touches.” – Mark Greenaway
Designing a selection canapés that reflected Mark’s creative approach to cooking was never going to be easy, comprising local produce with big flavours; culinary creativity in miniature!
A Potato and Truffle Espuma with Crouton and Shaved Truffle was served, the epitome of elegance in an oh so delicate glass. This was followed shortly by a quick OH! Taste visit to the kitchen to meet the man himself, Mark Greenaway. Watching Appetite Direct collaborator, Cat Johnson construct a group of Ballotines of 11 hour Slow Roasted Pork Belly topped with Hot Apple Jelly, Crackling and Apple Fluid Gel, I was mesmerised. After a chat (which resembled more of an interrogation, “but HOW do you get so much flavour?!”) and a series of photographs, I retreated back to the welcoming dining room and awaited the next round of innovative taste creations.
The Barbeque Roasted Quail Breast was dainty enough to be eaten without the worry of spillages while meaty enough to satisfy a hunger pang – where all too often canapés flounder. The addition of a Mandarin Fluid Gel added oriental sophistication while Scottish herbs rooted the dish firmly at home.
Cigarette sized Tuiles filled with Juniper Crème Fraîche and wrapped in Wild Ardgay Venison Carpaccio were soon presented to guests. Once again, sophisticated and refined, yet flavoursome and inventive. Tomato Tartare with Pickled Shallots on Crispy Rice Crackers provided vegetarians with an equally delicious alternative.
A flurry of early anticipated Peanut Caramel Cheesecake Lollipops topped with Salted Caramel was greeted by ‘ooohs and ahhs’, shortly followed by silence as the room stopped their chatter and simply enjoyed the signature sweet culinary delights.
