How long does it take to roast a pig? It takes Pig in a Poke eighteen hours to create the succulent hog that is pulled apart, slathered with apple sauce and packed into a bun.
Whether in a roll, a wrap or a poke (box for those of you outside Scotland!), the pork is juicy, salty and delicious. Topped with apple sauce (our favourite) or another sauce of your choice (garlic, BBQ, chipotle or salsa) and a crunchy piece of cracking, what more could one hope for from a hog roll?
This amount of flavour is entirely reliant on the hog itself. Reared in the Scottish borders, prepared by local butcher Bowers of Stockbridge and served from the Rose Street shop, owner Niall Middleton is dedicated to getting the best out of their British White hogs.

At first Glance: Found on Rose Street, the café lures customers in with a large hog roast in the window. Upon entering, the smell of cracking and the prospect of a roast lunch is hard to resist.

The Frontrunners: There are other options here, but honestly, who’s interested? It’s a hog roll or nothing as far as we’re concerned.
The Feeling: Basic, cheap eat in a central location. Nice premises (with seating for about 8 people), the perfect place to grab a lunch mid week.
The Team: After running an outside catering business for many years, Niall Middleton decided to go it alone and started Pig in a Poke.
Doubtful: Although the hog itself is delicious, and the crackling crisp, some homemade sauces wouldn’t go a miss. The rolls were dense and a bit dry, and could really benefit from a slather of butter and sauce. Room for improvement here, but the standard in Edinburgh is high for a hog roll.
